Every summer, homes across the state come alive with the aroma of mustard, chillies, and raw mangoes as families prepare their year's supply of pickles.

The Summer Pickle Season

The best pickles are made during the peak summer months (April-May) when raw mangoes are at their sourest and the sun is at its strongest. The intense heat helps in drying spices, curing the pickles, and developing deep, complex flavours. It's common to see large ceramic jars (jaadhilu) lined up on terraces and balconies across Telangana during this season.

The Sacred Ingredients

Every traditional Telangana pickle relies on a few non-negotiable ingredients: cold-pressed sesame or groundnut oil (nuvvula nune), sun-dried red chillies, fresh mustard powder, fenugreek seeds (menthi), and rock salt. These ingredients not only create incredible flavours but also act as natural preservatives.

Types of Telangana Pickles

Oil-based pickles: Avakaya, Gongura, Tomato — these are preserved in generous amounts of oil and last for months.
